If you’re craving the flavours of Fall, then you need to try these pancakes! They are delicious with the yummy taste of pumpkin spice; perfect for a cozy Sunday morning! These pancakes are super fluffy and don’t taste healthy, if you know what I mean.  Nick is a little bit of a pancake snob and prefers his simple, all purpose flour ones. I on the other hand, want to try and sneak in any bit of fibre I can when I’m feeding the girls. These pancakes satisfy everyones needs which is a win at our house.

 At least 5 days out of the week, Mila is begging me to make her pancakes for breakfast and most mornings, I just don’t have time. Therefore, I love to make a double batch of these and store the leftovers in the fridge for a quick and easy week day breakfast. If you’re hosting a brunch or want to up the health factor, sprinkle some pumpkin seeds on top of each dish to kick it up a notch!

Healthy pumpkin oatmeal pancakes by Honestly Alexandra


  • 1 cup oat flour (or you can make your own oat flour by pulsing oats in a food processor until powdery)
  • pinch salt
  • 1/2 tsp baking soda
  • 1 tsp pumpkin spice
  • 2/3 cup pumpkin puree
  • 2 eggs
  • 2 tbsp butter, melted 
  • 1 tsp pure vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • butter or oil for cooking


In a large bowl mix oat flour, baking soda, pumpkin spice and salt until fully combined. In a separate bowl, whisk together pumpkin puree, eggs, butter, lemon juice, vanilla and maple syrup. Pour into flour mixture and whisk until combined. Let stand for 10 minutes. If batter is too thick, add 1tbsp of milk of choice until it reaches your desired consistency (if necessary). 

Lightly brush pan with butter or oil and heat over medium. Drop batter in pan (approx. 1/4 cup) and cook until bubbles form on the top. Flip and cook bottoms until golden. Enjoy!
