If you’re wanting to impress your guests with a unique, fancy and incredibly delicious dessert at your next gathering, try making these French Macarons with Buttercream Filling.

Stacey from Sweet Bakery was kind enough to provide you all with her special recipe, and I’m telling you…it’s the only Macaron recipe you will ever need. The buttercream filling that is mushed between the most drool-worthy ‘cookies’ that are both crisp and soft (is your mouth watering yet?) will have your guests wanting to bring some home in a paper bag.

3/4 cups of almond flour

1 cup confectioners sugar

2 extra large egg whites

1/4 cup super fine sugar

1/2 tsp vanilla extract

Buttercream Filling

1 cup of softened butter

3 cups confectioners sugar

1/4 cup milk

1/2 tsp vanilla


Place almond flour and confectioners sugar in a food processor. And process for about 15 seconds. Soft the mixture into a bowl.

Line two sheets with parchment paper.

Place the egg whites in a large bowl and whip until holding soft peaks. Gradually beat in the superfine sugar until firm and glassy. Beat in the vanilla.

Using a spatula fold the almond mixture into the meringue one third at a time. When all dry ingredients are thoroughly incorporated, continue to cut and fold the mixture until forms a ribbon like consistency.

Pour the batter into a pastry bag fitted with a 1 cm round tip. Pipe desired circles on the prepared sheets.

Tap the baking sheets firmly to remove air bubbles.

Let stand at room temperature for 30 minutes.

Preheat oven to 325 degrees.

Bake in preheated oven for 10-15 minutes and cool for 10 minutes.

Peel carefully from sheets and fill as desired.

To make the filling cream butter and add icing sugar, milk and vanilla until fluffy.

Use a piping bag to fill centres.
