Spring is here and I have two things on my mind: more DAYLIGHT (so excited for those long, evening walks with the family) and less SICKNESS (I’m ready to move on from the endless winter colds and flus…just sayin’). Another thing I’m excited for is Spring cocktails! In the winter, I tend to stick with my red and white wine…but now that the weather is warming up, I’m beginning to crave fresh, fruity drinks!

To celebrate the new season, I’m sharing one of my favourite cocktails that’s just PERFECT for the warmer weather! I whipped together this blood orange champagne cocktail several weeks ago and knew I had to share it with you guys here on the blog.

I’m not a huge fan of overly sweet alcoholic beverages, so the flavour of this one is nice and light. Share it with your besties at your next girls night, drink it solo, or make one for your hubby because I’m pretty sure he will love it too! Enjoy!

Vanilla and Blood Orange Champagne Cocktail

4 Servings

1 bottle of rosé champagne of choice, chilled

4 oz vanilla liqueur of choice

2 cups freshly squeezed blood orange juice, chilled

1 blood orange, thinly sliced

Directions

Add 1oz of vanilla liquor to each champagne flute. For the remainder of each glass, fill half with rosé champagne and the other half with blood orange juice. Last, place one blood orange slice in each glass and press the slice gently so that it holds to the side of the champagne flute. Serve immediately.
